Oh wait, we used sunflower seeds instead of pine nuts because pine nuts are freaking expensive.
Ingredients:
Salad:
- 8 cups chopped spinach
- 1 cup halved cherry or grape tomatoes
- 1/2 cup corn (fresh, canned, or frozen - I used frozen)
- 1 1/2 cups chopped cooked chicken (I just brought a rotisserie from the grocery store)
- 1 large avocado (I actually used 2 small ones that come in the bag at the grocery store - cheaper)
- 1/3 cup crumbled goat or feta cheese (I used both cause cheese is delllicious!)
- 1/4 cup toasted pine nuts (again, I used sunflower seeds, and because I liked the texture, I added more than 1/4 cup)
Dressing:
- 3 Tbsp white wine vinegar
- 2 Tbsp extra virgin olive oil
- 1 Tbsp dijon mustard
- salt and black pepper to taste
- (this is not in the recipe, but I added 1tsp of sugar to cut the acidity - honey would work as well)
How to Prepare It
- place spinach in large bowl (the original cut her spinach into strips so I did too) and add rest of salad ingredients
- whisk together the dressing ingredients in a small bowl and then dress slowly while tossing until you get an even coat (add sugar/honey if necessary)
