Surprise Coral Bridal Shower


Over the weekend I had the privilege of attending a SURPRISE bridal shower for a good friend of mine. Her wedding color is coral so that was kind of the theme of the party. Here is a look at the beautiful shower.

 

Like I told our sweet host, you know its a good party when there is no non-alcoholic option. We were greeted immediately with beer, wine, and vodka punch. I need to get the recipe for this punch because it was AMAZING!


We drank out of mason jars and our blushing bride received her own special mason jar goblet. (Tutorial of how to make it here.)


We snacked on food from this unbelievable bakery. I stuffed myself stupid and it was worth it! 



Dessert consisted of this beautiful cake and cupcakes. 


We played two games, (one is a little risque and I didn't get any pictures of it but it was hilarious) and the other was to find the "ring" M&M's of out of these special, personalized M&M's (website here).


Because the wedding color is coral, we all dressed in it that afternoon. Although it was a surprise for the bride, she just happened to be wearing coral as well. It was a gorgeous and fun way to wrap up the weekend!

Closet

It is the first rainy day here we've had in a while. And although I LOVE summer, and sunshine and being outdoors, I am also looking forward to fall. So I jumped the gun a little today.

Pinterest Power Salad

So you know those pins on Pinterest "Another Pinner said this is the best thing that ever happened to her or her family or the world blah blah blah...." Yeah. I never believe those. When I see that, I assume it's some ghost account from Martha Stewart's magazine or something just trying to TRICK us! Boo on them. So, this recipe is an exact copycat of the one here. And I actually DID try it and it IS actually really good! 

Oh wait, we used sunflower seeds instead of pine nuts because pine nuts are freaking expensive. 


Ingredients:

Salad:

  • 8 cups chopped spinach
  • 1 cup halved cherry or grape tomatoes
  • 1/2 cup corn (fresh, canned, or frozen - I used frozen)
  • 1 1/2 cups chopped cooked chicken (I just brought a rotisserie from the grocery store)
  • 1 large avocado (I actually used 2 small ones that come in the bag at the grocery store - cheaper)
  • 1/3 cup crumbled goat or feta cheese (I used both cause cheese is delllicious!)
  • 1/4 cup toasted pine nuts (again, I used sunflower seeds, and because I liked the texture, I added more than 1/4 cup)

Dressing: 

  • 3 Tbsp white wine vinegar 
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp dijon mustard
  • salt and black pepper to taste
  • (this is not in the recipe, but I added 1tsp of sugar to cut the acidity - honey would work as well)



How to Prepare It

  • place spinach in large bowl (the original cut her spinach into strips so I did too) and add rest of salad ingredients
  • whisk together the dressing ingredients in a small bowl and then dress slowly while tossing until you get an even coat (add sugar/honey if necessary)
